Lamb Kefta

  • 1 medium crimson onion
  • 1 handful recent coriander leaves
  • 1 handful recent parsley leaves
  • 1 handful recent mint leaves
  • 1 tsp dried oregano
  • 1 tsp candy paprika
  • 1 tsp floor cumin
  • ½ tsp floor cinnamon
  • Floor black pepper
  • 1 tsp sea salt
  • 1 kg lamb mince

Tomato salad

  • 8 ripe vine ripened tomatoes -seeds eliminated and diced
  • 1 crimson capsicum -diced
  • 1 small crimson onion -finely diced
  • 1 handful recent parsley leaves
  • 1 handful recent mint leaves
  • ½   lemon -juice
  • 4 tbsp olive oil
  • 35 g pine nuts -toasted (¼ cup )

Tahini Sauce

  • 250 g full-fat pure yoghurt (1 cup)
  • 2 tbsp hulled tahini 
  • 1 clove garlic -minced
  • 1 tsp sea salt
  • Floor black pepper

Methodology

  • In a meals processor mince the onion and recent herbs till very finely chopped. Thermomix 10 seconds, velocity 5 (chances are you’ll must scrape the perimeters).

  • You can also make this with no meals processor, however you have to to ensure the onion and herbs are all very finely chopped (vital for the feel and flavour).
